Recipe: Pralines

What's cheaper and more satisfying than buying your own pralines? Making them yourself!

Pralines are expensive to purchase, but delicious.

The obvious solution is making your own. They make a great sweet treat with coffee or as a yummy dessert. And friends and family love getting them as gifts.

For how expensive they are, pralines are incredibly easy to make. Other than some simmering, they are essentially a no-bake candy.

  • 2 cups pecan halves
  • 2 packed cups dark brown sugar
  • 1 cup granulated sugar
  • 1 ¼ cup heavy cream
  • ¾ cup milk
  • 1 tsp. Vanilla

Directions

1. Combine brown and white sugars, cream and milk in a saucepan over medium heat.

2.  Stir continuously until the mixture reaches the “soft-ball” stage or 238 degrees. (The “soft-ball” stage is when a teaspoon of the mixture dropped into cold water quickly sets into a ball, or when the mixture dribbled over the surface of itself holds its trail. This takes about 30 minutes of simmering.)

3.  Remove from the heat and immediately begin to beat with an electric beater or whisk until the mixture becomes creamy and loses its sheen. (This takes about 15 minutes with an electric mixer.) After I use an electric mixer to get the mixture to a creamy consistency, I use a whisk to finish it off.

4. Stir in vanilla and nuts.

5. Drop by tablespoon onto baking sheets lined with wax or parchment paper.

6. Allow the candies to cool and set at room temperature. Store between layers of wax or parchment paper.
